  • 1 tbsp fresh lime juice about half a medium lime
  • 1 tsp lime zest finely grated
  • 1 cup coconut milk refrigerated carton style, not canned
  • 0.5 cup Greek yogurt plain or honey flavored for creaminess
  • 1 tbsp honey or agave nectar to taste
  • 1 cup ice cubes crushed for easier blending
  • 2 leaves fresh mint for garnish

Notes

For the best texture, use fully ripe langsat which should be translucent and sweet. If you cannot find langsat, longan or lychee are suitable substitutes. This smoothie is best enjoyed immediately but can be stored in an airtight thermos for up to 4 hours. Stir well before drinking if separation occurs.
