  • 1 tsp vanilla extract

  • 1/4 tsp ground cardamom optional but traditional
  • 1/4 cup water for soaking coconut
  • 2 tbsp cornstarch mixed with 2 tbsp water for thickening

Notes

Store leftover sobya in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of milk if needed. For a richer version, use half-and-half instead of milk. The drink can be made ahead and reheated, but it's best served fresh. Some variations include adding a pinch of nutmeg or a few drops of rose water for additional complexity.
