Ingredients

Ingredients

  • 4 cup cauliflower rice fresh or frozen, thawed
  • 1 large egg beaten
  • 1/2 cup mozzarella cheese shredded, part-skim
  • 1/4 cup parmesan cheese grated
  • 1 tbsp olive oil extra virgin
  • 6 oz salmon fillet skinless, cut into 1-inch pieces
  • 1/4 cup red onion thinly sliced
  • 1/4 cup kalamata olives pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes halved
  • 1 tsp dried oregano
  • 1 tbsp fresh lemon juice

Notes

Storage: Cool completely and store in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to restore crispiness. Make-Ahead: Prepare the cauliflower crust dough up to 2 days ahead and store in the fridge. You can also grill the salmon ahead and assemble just before baking. Variations: Use chicken or chickpeas instead of salmon for a different protein. For a dairy-free version, omit cheese or use vegan alternatives. Serving Suggestion: Serve with a side of tzatziki sauce or a simple Greek salad for a complete meal.
