Notes

Storage: Store cooled shortbread in an airtight container at room temperature for up to 2 weeks. For longer storage, freeze for up to 3 months. Make-Ahead: The dough logs can be wrapped and refrigerated for up to 3 days or frozen for 1 month before slicing and baking.
