  • 10 whole fresh rambutans peeled and seeds removed
  • 10 whole fresh lychees peeled and seeds removed
  • 1 cup coconut water chilled
  • 0.5 cup Greek yogurt plain or vanilla
  • 1 tbsp honey adjust to taste
  • 1 tsp lime juice freshly squeezed
  • 1 cup ice cubes crushed ice preferred
  • 2 sprigs fresh mint for garnish

Notes

For a vegan version, substitute the Greek yogurt with coconut cream and use agave nectar instead of honey. If using canned lychees or rambutans, reduce the added honey as canned fruit is often packed in heavy syrup. Best served immediately, but can be stored in an airtight thermos for up to 4 hours.
