  • 2 cups fresh pea shoots loosely packed, roughly chopped
  • 1 cup baby spinach fresh
  • 1/2 cup fresh mint leaves stems removed
  • 1 large green apple cored and sliced
  • 1/2 medium avocado pitted and peeled
  • 1.5 cups coconut water unsweetened and chilled
  • 1 tbsp fresh lime juice about half a lime
  • 1 tsp fresh ginger peeled and grated
  • 1 cup ice cubes optional for extra chill

Notes

For a protein boost, add a scoop of vanilla collagen or hemp seeds. If pea shoots are unavailable, microgreens or watercress make excellent substitutes. This smoothie is best enjoyed fresh but can be stored in an airtight mason jar in the refrigerator for up to 12 hours; shake well before drinking.
