  • 1/2 cup plain Greek yogurt full-fat or low-fat
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp lemon zest optional, for extra brightness

Notes

Storage: Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer at 375°F (190°C) for 5-7 minutes to restore crispiness; avoid the microwave as it will make them soggy. Make-Ahead Tip: You can shred and salt the zucchini up to a day in advance. Keep it in the fridge, but be sure to squeeze it thoroughly before making the batter.
