Ingredients

  • 1 lb lean ground beef 90% lean or higher
  • 2 cups fresh broccoli florets finely chopped
  • 1 tbsp olive oil extra virgin
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground
  • 0.5 cup feta cheese crumbled
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dried mint optional for garnish

Notes

Storage: Store cooled bites in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes or under the broiler for 1-2 minutes until warmed through. Make-Ahead: Form the beef and broccoli mixture into bites and freeze on a baking sheet. Once frozen, transfer to a freezer bag. Broil from frozen, adding 2-3 minutes to the cook time. Substitutions: Ground turkey or chicken can be used instead of beef. For a gluten-free option, ensure all ingredients are certified gluten-free. Serving Suggestions: Serve with a side of tzatziki sauce, hummus, or a simple yogurt dip for a complete appetizer spread. They also make a great protein-packed snack or light meal.
